Cherry Tomato & Coriander Salad


An incredibly simple salad to prepare, but bursting with the taste of sunshine! Also very versatile - serve as a side salad, or as a deliciously fresh pizza topping, or bruschetta-style on top of toasted baguette slices, or stirred through pasta with some parmesan cheese for a light and healthy supper.

PREPARATION:

PREP-to-MOUTH: 20mins

SPECIAL EQUIPMENT: None

  • Cut cherry tomatoes in half.
  • Chop coriander and spring onions finely.
  • Dice shallots into small cubes.
  • Gently stir herbs and tomatoes together in a bowl with the olive oil, balsamic vinegar, pinch of sugar, salt and pepper and leave to marinate for at least 15mins.

Optional, and highly reccomended step:

  • Flash under a 200°C hot grill for 10 mins to really intensify and deepen flavours.
  • Reserve some herbs from step 2 and scatter over the top.
